The Flavors of Our Ingredients

Tortillas

Many thousands of years before contact with Europeans, the people of the Sierra Madre Mountains in Mexico created corn by breeding a hybrid of wild grasses. By the time Cortes arrived in the Americas in 1519, corn had become a nutritious staple that not only helped the Mayan and Aztec civilizations to thrive but also had become the primary ingredient in a delicately rendered food, the tlaxcalli, which the Spanish referred to as the tortilla. At Qdoba, we serve both corn tortillas and the flour tortillas of Mexican border cuisine that have become so popular in the States. Our chips are handmade from fresh corn tortillas and tossed with lime and salt. Try them with your choice of our five unique salsas.
